Not every industry can claim to answer prayer, but without flour, �give us this day our daily bread� would be a difficult prayer to answer � and for well over a century, Bay State Milling has been producing sustenance for body and soul on the bank of the Mississippi.
It's the flagship mill, the one the company was built around. With corporate offices in Quincy, Mass., Bay State is the largest family-owned grain-based food company in the country. Chief Executive Officer Brian G. Rothwell is the fourth member of the family to head the firm founded in 1899 by Bernard J. Rothwell and two other Boston flour brokers seeking a consistent supply of high-quality flour they could market under their own brand.
Impressed by Minnesota�s reputation for high-quality spring wheat flour, the partners purchased Winona�s Porter Mill � shuttered since being driven into bankruptcy by the Depression of 1893 � and the company trademarks. However, the new company, incorporated as Bay State Milling in recognition of the partner�s Boston roots, promptly announced that its premium flours would be marketed as �Bay State� and �Wingold.�
The first Wingold Flour was milled March 18, 1899, and Bay State soon began offering local farmers 3 to 5 cents a bushel over the local market price to assure their mill of a steady supply of top-grade wheat and rye.
With a daily production capacity of 2.41 million pounds, the Winona mill is the largest of the eight operated by Bay State at eight states. The Winona mill currently employs about 100 people.
More than 30 different products are produced and labeled in the Winona operation. The majority of the mill�s production is refined white-wheat flour, which is shipped in bulk by truck and railcar, and in 25-, 50- and 100-pound bags.
